Guest Post: Pink Monkey Smoothie



Can you believe that it's going to be Easter this weekend... and it's also going to be 60° outside in Utah?!?  That makes me SO happy!  I hate it when it's cold outside when we're Easter Egg Hunting.

Want to know what else makes me happy? Guest Posters!  Yes, I love them!  It's always so much fun getting to know other bloggers out there, creating friendships and seeing the yummy things they have been busy creating.  

Today our special Guest Post comes from Anyonita Nibbles.  She's sharing her Pink Monkey Smoothie recipe with us.  It looks so yummy and easy to make!  I definitely can't wait to try it :)


In an effort to be healthier, I've been replacing two of my meals a day with smoothies. I replace breakfast and lunch with and/or veg smoothie packed with nutrients and vitamins. At first I was skeptical but soon realized that by doing this, I was feeling fuller longer and, combined with daily exercise, I was losing weight. So I've been on a smoothie kick and have gone a bit mad with recipes. This one is one of my favorites and it's usually my go-to Monday morning smoothie when I feel a little bit extra pep to help me snap out of the weekend laze and back into the work-week grind. 

I'm all about ease and planning ahead, so you'll notice from the list of ingredients that most of the fruit and yogurt is frozen in convenient little cubes that I can just chuck into the blender. Here's a tutorial for freezing yogurt properly and one for freezing bananas without them going brown.  

Pink Monkey Smoothie Ingredients
A handful frozen Morello cherries
3 cubes(3tsp) frozen fat free natural yogurt
1 cup semi-skimmed milk
1/2 gala apple
5 chunks frozen banana
Cherry 0% fat Activia yogurt (normal size pot)
A handful of Special K Oats & Honey cereal or rolled oats
1 tsp honey

Let's blitz: 
If using rolled oats, tumble those into the blender first and give a few pulses to break them up.

Add the milk and cherry yogurt followed by the apple. Then tumble in the frozen ingredients in any order you fancy.
Finish off with a drizzle of honey. Blitz until it's nice and smooth and thick and serve in a tall glass. 

I tend to have these for breakfast, but have found they're great after an intense workout. I am also just finishing up an e-book filled with smoothie recipes. It will be released on April 30.
